The mortgage will record without witnesses, however if you have witnesses and they do not print their name under their signature then the recorders office will kick it back. Witnesses names must be printed below their signature.

I usually ID the witness, you can record the info in your journal - although as you know a journal is not required in Florida, just good judgement to use one.
