I'm not sure if you're familiar with the "Field Acoustic Restoration" techniques used by Paul Howard's on his YouTube "Restoration Archive" channel, but he is actually able to extract some stereo information from mono recordings. His restorations of the Toscanini Philharmonia Brahms recordings are second to none, IMHO, and are a great example of what he's been able to achieve. I asked if he had edited the fireworks out of the Brahms fourth finale, and he said, "You can hear them, but they are behind the mic."[!] I don't know how he does it, but if you haven't yet listed to these restorations, you're in for a real treat.
