It's actually a habit that Jaz got into when she and Jen began working together. She would operate as Jen Walters since Jen was publicly known to be the She-Hulk, and people upon seeing her would automatically surrender because they didn't want her to transform. Granted, she could have also made herself appear as She-Hulk, but the real Jen wasn't sanguine about that; she felt Jaz would be horning in on her "true" form, which goes to show how much Jen has come to think of She-Hulk as the real her.
All of this will be made clear in future stories.
