The setups that I have seen put the tank in a locker in the cockpit. It is sealed off from the rest of the boat. To use a propane appliance you open the locker and open a valve on the tank. The hose runs through the side of the locker (the hole is sealed) to the stove or furnace. The owners got in the habit of turning off the tank whenever the units weren't in use. Propane is clean, cheap, hot, easy to use, and, when handled cautiosly, safe.
