Posted by Will I came across a link a few years ago where another scientist had done an in-depth study of the effect of smoke on wood and applied the results to guitars. It started as a strength analysis of structural beams exposed to smoke in house fires, I seem to remember. It has a major effect on properties that relate to strength and flexibility, with the grain and across it, increasing some and decreasing others. Unfortuately I no longer have the link.
