Yes, I agree with Geoff, I've been able to find plain single foods i.e. Heinz glass-jar pureed pear for 4 - 6 months at Coles. In fact last week they had it on special 5 jars for $5. Perhaps see if you can get Coles online to deliver to you? HOWEVER that price even on sale highlights that it's not cheap to go with the commercially-prepared foods. I don't know if it's just Australia (since I've had the babies here, and didn't focus on this stuff while I was still living in the US), but it's common here for mothers to prepare their own purees and freeze them in ice cube trays until ready for use. I have a 7-month old and a freezer full of orange and green blocks!
In answer to your question about how to go about it, first, run, don't walk to the store and buy a copy of Baby Love by Robin Barker. It is THE authoritative infant care book in Australia and it is fabulous. There is a chapter on preparing your own purees, including how to do apple etc. Otherwise, I basically just steam a lot of sweet potato or pumpkin (what they call squash here) or whatever, then use the stick blender thing to puree it, adding some boiled water to it for consistency. Then put it in ice cube trays (which you can sterilize if you want; the guideline now says it's not so crucial to sterilize everything after 6 months). Thaw what you need; my baby will currently eat about three blocks at a meal.
Another thing you should do is contact the Early Childhood Centre closest to your home and make an appt to go see them. This is a really amazing free service for all Australian children to age 5. Basically, you can go in and see a baby nurse and get advice on feeding, sleeping, health etc and they will chart their measurements and refer you to any further checks that are indicated. The one near my house has a monthly 'starting solids' workshop that covers these food/ puree issues.
One thing the baby nurse told me is that I should be incorporating protein by now, so I've started blending some chicken or tuna or cheese into the veggie purees.
