Yes - it is about the breed of hen - I think I looked that up the first time I was trying to find them - and White Leghorns sounds familar. Maybe some of the caged ones here have lighter shells though, I have seen light brown or beige eggs.
Thanks all!
Cheers,
Chris

: I thought the color had to do with the breed
: of the hen. Breeds with white feathers and
: ear lobes, such as White Leghorns, lay white
: eggs. Those with red feathers or ear lobes
: lay brown eggs.

: Hi,
:
: I agree, the brown don't dye up as well.
: You need to look for the cheaper
: "caged" eggs. The brown one's are
: usually the organic or free range, but the
: cheaper Woolworths/Coles brands usually have
: white eggs.

: Hi - has anyone seen eggs with white
: eggshells
: in Sydney recently? I am sure I saw them
: once ages ago and wanted to remember where I
: saw them so I could use at Easter time for
: dyeing (but did not write it down). The
: brown eggs just don't dye as well. But I
: haven't seen any lately...
