An update - I went to Flemington Markets this past Saturday (18 April) and one of the vendors had white shelled eggs. I only noticed one selling the white eggs and I don't know if they always have them. The vendor was one of the ones around the perimeter of the building - I am assuming they may change locations though from week to week... anyway I will go there next year before Easter to try my luck.
