It hadn't occurred to me that alfalfa could cause any physiological changes, but now that you mention it, I might start observing. Unfortunately, alfalfa is cheaper than orchard grass hay, so I end up giving them some of it to stretch my hay dollar. Never thought it would come to that, but they all seem pretty happy with the deal.
Out of 5 horses, I only have the one TB mare that is still ouchy on any kind of footing with rocks when she has no shoes or boots. She was my main trail horse, but now she's just a fat brat.
