Actually, I believe it's the insulin resistance component of Cushings that can cause the excessive urination and drinking, similar to a person with diabetes.
Am thinking you might want to check blood glucose (and insulin)? If nothing else, perhaps to rule it out.... It's my understanding that some folks have used human glucose meters to check their horses glucose levels. (have no experience with that myself)
