And between the leaves and the actual olive fruit, the horses and cows LOVE them! We just pruned our trees and we left the cut branches in the pastures so the horses could strip the leaves from the branches. All of our trees look beautifully trimmed at about 10 feet off the ground because the horses eat the leaves as high as they can reach. It looks like we've taken a trimmer and trimmed them evenly all around the place.
They won't eat the actual olives until they have fallen from the tree and turned black though. Even our dogs love eating them.
The only drawback is when they bloom and produce LOTS of pollen for about 5 days. Our cars are covered in yellow pollen and there is no use washing them until the trees are through doing their thing.
