I was riding a mare for years that gradually lost sight in one eye due to glaucoma. She didn't learn to jump until she had already lost sight on the one side and she did just fine. Sometimes she would need a little more support on that blind side, like keeping a hand on her neck while grooming that side so she didn't swing her head around and bump anything.
Once she had the eye physically removed she was a much happier horse and she was great on the trails and totally functional otherwise.
