That is good he likes wet food, gives much more options! If he eats up the whole tub and at some point is dropping weight just use more pellets. One problem I am seeing is that the power floats are causing some jaw pain and this causes fatigue in chewing. So it makes it hard to keep weight on with just hay, cause that requires so much more chewing. Sounds like you are going good, check out Transfer factor also. I first learned about it when the older cushings horse I was managing got an abcess. He could not heal and the vet had dug a huge hole in the foot. I was weary cause the owner was older and relied on me to do everything. 4 weeks in of wrapping every day and the hole was not getting smaller and it was growing proud flesh. I begged her to do somethign for his immune system and she contacted her vet and he recommende the T.F. 3 days after starting that the hole started to close and healed right up. That horse never had another abcess, never got any infections and lived to be 38 with cushings! I really do believe it was partly the Transfer Factor.
