I don't know much about the heroes reborn stuff since I wasn't into comics at that time. Most of the other stuff I know from reading back issues or summaries.
Most of their major appearances have to do with Thor. Some of the thunder god's best showings have to do with them, but at the same time show how ineffectual a being even as powerful as him or Odin is against them.
I think they have popped up in the X-Men once or twice. The only other major storlyline I can remember featuring them was an FF one where they were at war with the Watchers due to the Watchers being non interfering cosmic beings and the Celestials interfering on a genetic level. The war had apparently been going on for thousands of years. Also, the Watchers had one they called "The One" who was created to contain all of their knowledge and pass it on to the next universe. The Celestials discovered that The One was inadvertently causing the universe to stop spreading out and collapse. To stop this the Celestial Exitar the Excutioner (4000 feet tall compared to the normal 2000) was going to kill all of The Watchers. In the end it killed The One, but the Invisible Woman was able to dissolve Exitar because they both tap the same power source, hyperspace. (According to the story) Afterwards Uatu explained that the conflict had been merely postponed for a few thousand years till the Watchers could form another "One." IIRC, Uatu also implied this was the goal of the Celestials as well so in a way Exitar allowed himself to be defeated.
As to the current series, I wouldn't mind the explanation so much, but to ground the Celestial in such away seems to limit their cosmic scope and what they were originally intended to be.
