You've made sure to do loads of research first, right? Make it obvious you're serious, and all that.
Corn snakes are known for being awesome escape artists, but if you cover every crack in the cage well, you shouldn't have a problem. I was careless and lost my corn for awhile, but I learned from it, and she hasn't escaped since. Basic rule of thumb is to not underestimate how small of a hole they can squeeze through -do that, and you'll be fine.
As for the dead mice in the freezer, it's really not as obvious or creepy as you'd think. If you buy food a month at a time the bags are small and generally inconspicious. And there's no smell or anything.
It's best to clean the cage once a week or so, depending on how often you feed it, but it's usually nothing more than a spot-clean kinda thing. Cornsnakes are pretty clean animals.
Lastly, don't push too hard but don't give up either. My mother hated the idea of the mice in the freezer, and my dad has an unbelievable phobia of snakes... and yet I managed to convince them.
Cornsnakes are REALLY easy to care for. I've got nine different kinds of animals, and my snake is by far the easiest. Even beats the fish.
