I know that eating good meals alone is really hard. I suggested to my mom that she cook one meal a day for a week and make up her own TV type dinners. After that, I told her that she could cook one meal a week and always have something in the freezer to put in the refrigerator at night and heat up the next day. She has been doing that and keeping a salad and/or chopped fresh veggies to eat as snacks. It has really cut down on her grocery shopping and cooking but she is eating healthier now. Her weight and numbers are getting much better than they were for a while. I hope that you find a way to make it easier and better for you.
