I know what you mean, Barb. I didn't come across long dry spaghetti (wrapped in blue paper with exotic Italian picture on it- which was only available in delicatessens) until I was a student in the 60s.
Suggest that, to cooked cold pasta shapes, you add : some sort of dressing (eg French- wine vinegar & olive oil) and eg chopped fresh tomatoes, fresh torn basil, scissored chives, sliced green and or black olives. You can also have fresh chopped different coloured sweet peppers and cold cooked petit pois.
I'm veggie so also add chick peas/sweet corn or small haloumi /feta chunks.
To make it pretty for a party you can garnish with edible flowers such as marigold petals and little mint leaves.
The trick is to make it not too sloppy but with enough liquid to bind it.
You can use GF soy sauce instead of dressing.
