Scharr in the yellow packets freezes well, but the slices are tuny and its very expensive - I can't remember what I paid for my last loaf but I worked out that it was 1.75% more expensive per slice than Genius or M&S.
How long are you keeping it in the freezer? I don't think even normal bread has a very long freezer life.
I'm too lazy to seperate each slice and put paper between, in fact I'm too lazy to even wrap the loaf. I just take it out of my shopping bag and dump it in the GF part of the freezer in its original wrapping. But then, I don't use it for sandwiches, just toast, as I hate the way it sticks to the back of my teeth.
