Spain is no problem. Just look for SIN GLUTEN,I have been in Spain twice a year for 7 years since diagnosed. All the islands and I am in Fuengirola now. Never been glutened anywhere in Spain. Italian and Spanish resturants are the best as they understand the condition. No translation card , just mention coeliac and gluten free,or Sin Gluten coeliac and you should not have an issue. I found English bars the worst unless they show the gf symbol. Go on trip advisor and search,"gluten free resturants in ?", put in the resort you are staying and read the reviews. I eat out nearly everyday, just do some research and enjoy your holiday.
