My mum always made them for birthdays too, I never had a birthday cake when I was a child. Like you we had silver thrupennys in it, it was such a big treat back then. The dumpling sat on a stool in front of the coal fire to dry off and we would pick the skin off and eat it, yummy. I would imagine that the recipe would be quite easy to change to GF, just a change of flour needed really, maybe a wee bit more liquid.
