GF bread doesn't keep very well and putting it in the fridge makes it even worse as the starches go dry and crumbly. It's best to slice it and freeze on day of purchase, then you can take out slices as required. I usually toast from frozen, but you can refresh in the micro if you want to eat untoasted.
