If you hire a car rather than paying for coach trips the only really expensive thing is the Blue Lagoon (which IS a wonderful experience).
Apart from rush hour on a Friday evening, the traffic is really really quiet and the paved roads are a joy to drive along. You can see all major sights without going on the unpaved roads. (You need to get a 4x4 and pay extra insurance to go on the unpaved roads).
Where are you staying? We found Selfoss good for supermarkets and places to eat. We ate all right in Reykjavik too. There were Magnum icecreams in all touristy places.
