You have a unique perspective on this as you're involved at the sharp end. My guess is that when the fashion for GF food ends, and supermarkets start reducing both the range and volume of GF basics, we could be in a situation where there is simply no local supply at all.
This would be a large step backwards for all coeliacs. It's unfortunate that at the moment there is an unprecedented, unrelated demand for GF products - well, not unfortunate - the range of stuff on offer at the moment benefits us all hugely - but what happens when everyone moves onto the next food trend and coeliacs are left high and dry?
I fear that with the loss of prescriptions only the well-off are going to be able to access safe food, and as for the choice available - who knows? I guess the market will dictate that, which probably means white bread and white flour (not the best products for diets depleted of fibre and certain vitamins).
