I have a friend of over 50 years standing, and we visit each other every week. She is 78 so has two years to go before her 'special' birthday, but I can see she might take the same stand as your friend - its the word 'disease' in the title 'Coeliac Disease' that spooks them. I call it 'Coeliac Syndrome' when discussing my problems with her. She's still not convinced I'm not infectious and was appalled when I cuddled my new great grandson before he'd had his inoculations.
This needs sorting though, or you will forever mistrust her and a perfectly good and values friend could be lost through a misunderstanding.
Can you find out which restaurant your friend will be using and contact them to get them to email their menu with emphasis on coeliac friendly options? I don't think I've come across an establishment that didn't cater for coeliacs in UK for many many years.
Then show it to your friend and bluntly ASK for an invitation. (Then she can be in no doubt as to your feelings). if she still refuses you will at least know she doesn't place as much value on the friendship as you do!
If she still refuses - then she's not a real friend and should be dumped!
