You may be right, I had DH on my elbows & knees with none of the normal symptoms of coeliac; except a couple of times my blood pressure plummeted after eating gluten. This all started when I was in my late 50's.
Before that I think I'd been sensitive to gluten on & off as I'd be uncomfortable sometimes when I was eating more of it. You may have had this sensitivity without it turning into proper coeliac disease. (NCGS, non-coeliac gluten sensitivity.)
The DH felt like the cold sores my husband has described, a bit like something burrowing into my skin.
Don't be afraid of the endoscopy if you have to have one, with the stuff they give you you wouldn't care if they chopped your leg off!
