GF Buckwheat is available. GF Qunioa buckwheat is also available. You cannot have any idea as to to wheat content - it may be in powder form - so why take a risk when it is not necessary?
As for GF couscous alternatives (the key word here is alternatives) it all depends upon what is used to make the GF couscous. For example, one gf couscous alternative (referred to as Acini di Pepe/Pasta Grains) was an outright winner of the Pizza and Pasta category in the Free From Foods Awards just a few years ago. It was / is made from a mix of corn and rice, and works beautifully every time!
