my homemade bread is now very nice using orgran wholemeal bread mix, but i make only small tin size loaf, and always turn oven off... after it has risen and slightly browned on crust ...to cook on residue only for half of the cooking time at about 170 to 190 degrees only it comes out soft and like good normal bread, i never cut it until it is fully cooled but tip it out on to a rack in the oven till cold.for cutting small loaf so keeps fresh till eaten in my case.with the door open at the end to warm our kitchen.dinner room .it took me very long time to learn to crack bread making gluten yeast free wholemeal bread but glad i never gave up trying now at last!!!
