My doctor advised a series of elimination diets. I started by removing all processed food from my diet. Experimentation over a number of years has demonstrated that I react to GF oats.
Perhaps more interestingly I found that virtually all supermarket processed GF foods made me ill. Many years on I have demonstrated that this is caused by an intolerance to bakers yeasts, and emulsifiers including Carboxylate Methyl Cellulose and mono and diglycerides of fatty acids.
I wonder how many other coeliacs have had problem with processed GF foods?
Today my health is fully restored, but I restrict my diet to unprocessed foods only.
