I find the gluten-free foods a pale substitute for the 'real' thing, and whenever I've fed my family these artificial nutrients they tell me how yuk they taste. So I wouldn't worry too much about needing prescription products. We don't NEED cakes and cornflakes or even gf foods.
Its perfectly possible to be healthy on natural products as you know, and there are plenty of sweets and chocolate for treats when he's ready.
But I would still push for a diagnosis though, even if its none-coeliac gluten/dairy intolerance. It'll be on his medical records so (hopefully) he won't be prescribed mediaction containing dairy or gluten ............. although we've all had experiences of that just not happening.
