Breakfast in Italy is surprisingly simple. A milky coffee or hot chocolate, and yes, a croissant or some other type of sweet bread. That said, they have an abundance of gluten free items which will be separately wrapped.
There is really no problem finding gluten free foods it Italy. Foods marked as 'gluten free' / 'Senza Glutine' will usually have been produced in a facility Licensed by the Ministry for Health.
Have a great holiday.
