+Tabbouleh - add chopped (seeded) tomatoes, cucumber, parsley, mint (use a quarter teaspoon of Colman's garden mint if fresh not available), season to taste, add fresh lemon juice and mix. Serve as a side salad, as part of a starter, with BBQ's, with hoummous, babaganoush etc.
+again with pasta grains - add finely chopped red onion, and chopped cooked beetroot, add some balsamic vinegar, season to taste, mix. Great if served with goat's cheese.
+or mix with thinly sliced and 'dry fried' (to get as much fat out as possible) chorizo, some dried tomatoes and halved cherry tomatoes. Dress with a herb vinaigrette.
pasta penne salad. Cook the pasta. Cool. Add a spoon of olive oil before putting into the fridge until you are ready to assemble your salad. Serve with:
+a mix of tuna, some mayo, finely chopped gherkin, some olives, and perhaps some cherry tomatoes.
+or try with a mix of tuna, some mayo, finely chopped spring onions or chives, sweetcorn
+perhaps with some cooked chicken - chopped. Add some sun dried tomatoes, some cherry tomatoes, choppd spring onion or chives, some chopped dried apricots, and some chopped avocado (dip avocado pieces in lemon juice before adding to prevent browning). Combine with some mayo to which you can add a teaspoon or two of wholegrain mustard. Or try with honey mustard.
