Tabbouleh made with quinoa

Reading Sheona's post about tabbouleh below...I made one with quinoa the other night and it was really good.
Put the rinsed quinoa in boiling water and boil briskly for 15 mins. Drain and refresh with cold water. Drain and then squeeze out the excess.
Add handfuls of chopped parsley and mint (a LARGE handful of each - be generous!) a chopped spring onion, the juice of half a lemon and a splosh of olive oil, along with generous salt and pepper.
Leave to sit for 20 mins. Enjoy!
