my lactose intolerance never went away, although i know for some coeliacs its temporary. Try cutting out butter, cream and milk and see what happens. i quite like freefrom margarine and koko milk.
I also think im intolerant to cow dairy anyway because it makes me itchy and gives me heartburn, but im fine with low lactose sheep or goats cheeses (manchego, osssu iraty, pecorino romano etc).
Or could it be that youre a sensitive coeliac (like me) and cant tolerste gf oats, wheat derived sugars/syrups and barley extract? These things are ina lot of gf baked goods.
