The screened ceiling will cause more issues than one, remember, heat rises, and will escape through an uncovered roof. And if you notice, the steam from the warm mist hidifiers travels upwards as well. I'm currently stuck with an open air setup, what I did to prevent those issues was place a large piece of plastic, like you use to cover the floor when painting, to cover the top, back and two sides of the enclosure. I would probably suggest something a little more flame retardant in your case with the lights up there, mine hang from the ceiling, roughly 2' from the plastic. Katrina's idea about the lids is a good one, or if you have left over plywood you can lay it across the areas not covered by lights. As far as the humidifier, I'm using a $15 Vick's vaporizer from wal-mart and it works fine. If you don't want to fill the humidifer daily, I would suggest a larger one than my own, wal-mart has a "one step up" humidifier from mine that's still only $25 and I believe it lasts 24-36 hours where mine lasts 16-24.
