You may be able to find a furnished apartment for $1300 a month but remember this is the more expensive time (Christmas through Easter ) to be down here. Will you be driving down here? Do you speak Spanish? Since you state you want to be in Mexico for 7 months you will need a FM3 visa ($140 each) vs. the 6 month FMT visa ( $20 each )...suerte
