well first of all your right make sure the tree is dormant but seems like to me you are limited to what you can cut off becuase you have to cut the branches off that afflict with the vision of the hill. do not cut off more than a third of your tree also start with the branches that are growin inward toward the tree and that are corssing with other branches . if you have to cut off the tree limbs that are interferring you may not have a choice on dammaging your fruit.
