I'd stick with Joe's recommendation:
1024 x 768 is the way to go, and on higher res monitors 1024 sites don't look so bad either. You still get a pretty good field of view.
I agree with his stats and wouldn't go any higher for now in keeping with what is currently a modern look.
I caved on this for AC's commercial site, taking into account that some of AC's customers might still be using 800 x 600. Since sales was a factor, it didn't seem to be a good idea to go any higher since it wasn't strictly necessary for the design and might push the "Add To Cart" buttons off to the right side... "off the page".
But if sales were NOT a factor, I would definitely go for 1024.
