Could it be that she is sitting between the King and then still Crown Prince Olav because she was married to the only other next in line to a throne present (at that time Jean was still the Hereditary Grand Duke of Luxembourg)? I doubt any such consideration as honouring a deceased mother would come into play with so many royals gathered, even if she was born a Swedish princess.
