I to have got a 2000 Disco 2 and have taken it off road many times, it is a standard Vehicle with no modifications and standard road tyres. The off road ability is outstanding, and it is very easy to drive off road with the electronic traction control and hill decent. These vehicles are designed to go off road and doing so will not harm any of the systems. The only thing stopping me using the vehicles full ability is the fear of damaging a car that I paid a lot of money for. However saying that I have had a few minor bumps !!
The main areas that cause problems off road are the Front and Rear bumpers, if you go up a hill that is too steep you will ground the underneath of the back bumper and if like me pull the whole bumper off. The air suspension will to a certain extent raise the cat if it detects that any part is grounded but you still have to be careful.
The same applies to the front when going down, the under side where the fog lights are housed is quiet low down and tends to catch the ground and leave beep scratches in the plastic.
As for lift kits I have never seen any for the disco 2
