I don't know if I've missed a mention elsewhere on these threads but I'm surprised that Goethe's Faust hasn't been mentioned. OK , I know a lot of re-writing has been done but Gounod's Faust is probably the best known example. There's also Boito's Mephistophele, Mendelssohn's Die erste Walpurgisnacht, Schubert's Gretchen am Spinnrade, one of Schumann's Intermezzi and Scenes from Faust, Liszt's Faust Symphony and Berlioz' Damnation of Faust and maybe Ronald Stephenson's Faust Triptych . There must be lots I've missed by composers well-known and obscure.
