I like to cut up a lot of veggies for the week.
I make a veggie tray with dip out of part of it. I mix 16 oz Fage 0% Greek yogurt with a packet of any flavor Hidden Valley Ranch Dip mix for the dip. When I want a salad I will thin the dip down with a little water or if I have the points almond milk (because I don't drink milk)
I throw together different stir-fries with chicken or shrimp (beef with I have the points to spare) and some of the veggies.
I roast some of them on a tray with chicken, shrimp, sometimes beef, salmon and maybe some whole green beans, asparagus, green onions, garlic and a few spices, salt, and pepper with a little olive oil drizzled over it.
I make soup out of some and add my low point meat of choice, tomatoes, onions, canned beans of some kind and broths.
I throw together and make casseroles by combining what I would put in a soup without all the liquid. (tonight I cup up a chicken breast and cooked in a pan with a little oil, added diced tomatoes, cannellini beans, and simmered a few minutes, added some Tuscan spices (I want to try it with Mexican spices as well as Italian) and spinach. Because I was low on points today I added a cup of cooked pasta to the dish that served 4.
As long as I have a lot of vegetables around and a variety of low point or zero point meats and lots of spices I don't usually use a recipe.
