I don't know why, but this came across my FB page today. I thought you might find some things here. I glanced through it and there are a few things for where you are post op but it might give you a lot of ideas as you are able to eat more foods.
This was the recipe they used to advertise the site. The lady said she had lost 68 pounds in 12 weeks by using the book exclusively. She said that she liked the following recipe so much that she had it every day for lunch. I thought it looked interesting.
Mini Lasagna Cups Servings: 12 cups Prep time: 15 minutes Cook time: 20 minutes Total time: 35 minutes 🧂 Ingredients 12 wonton wrappers (found in the refrigerated section near tofu) ½ lb (225 g) ground beef or Italian sausage ½ cup ricotta cheese 1 cup marinara sauce (store-bought or homemade) 1 cup shredded mozzarella cheese ¼ cup grated Parmesan cheese ½ teaspoon garlic powder ½ teaspoon Italian seasoning Salt and pepper, to taste Olive oil spray or butter, for greasing the pan 👩🍳 Instructions Preheat oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with olive oil or butter. Cook meat: In a skillet, cook ground beef or sausage over medium heat until browned. Drain any excess fat, then add marinara sauce, garlic powder, Italian seasoning, salt, and pepper. Stir and simmer for 5 minutes. Prepare cups: Press one wonton wrapper into each muffin cup, forming a little cup. Spoon about 1 teaspoon of ricotta into the bottom of each wrapper. Layer: Add a spoonful of the meat sauce, then a pinch of mozzarella cheese. Repeat the layering one more time (if your cups are deep enough). Top: Sprinkle each with Parmesan and a bit more mozzarella on top. Bake: Bake for 15–18 minutes, until the edges are golden brown and the cheese is bubbly. Cool slightly & serve: Let cool for 5 minutes before removing from the pan. Garnish with fresh basil or parsley if desired.

Thank you Delta! I'll look for wonton wrapper next time I go to the grocery store. They sound really good!
