This "Fried Rice" recipe is one of those you can make to fit your tastes and measure it the way you need to to fit your plan.
Get a bag of Riced mixed vegetables from the freezer section. I hope there will be a pic.
Add a spritz of pan spray to a non-stick pan or a little olive oil.
If you have any leftover meat from dinner the night before that will go with stir fry, you can chop up a little and start heating it for a minute or two before adding the frozen veg. An alternative is to use a little of the already cooked, refrigerated or frozen chicken, steak, or shrimp.
Put in however much you feel like eating of the vegetables, add a little garlic and ginger (I love the squirt kind in the refrigerator section, but chopping your own or using powdered will work), and "stir-fry" it for a few minutes.
Scramble an egg or egg whites, move the vegetables to one side of the pan and scramble the eggs in the empty side, then mix together.
Shake on some soy sauce, salt, and pepper to your taste and enjoy.
Sometimes when my husband is eating with me, I will add a half cup of cooked rice, brown rice, or quinoa to the mix.
It is so flexible. You can just cook a handful of the veggies, or you can eat the whole thing by yourself if you are hungry and only add one serving of protein to it.
For those of you who do not like cauliflower, it does not taste like cauliflower--especially if you use sesame seed oil instead of olive oil.
More eggs or egg whites can be added if you are eating higher protein.
It is just so fast and flexible, I even have it for breakfast.
