My husband was trying to order a tool one day when this recipe randomly popped up in the middle of ordering.
He thought it looked good, so he called me in there to see it. I wrote it down, and we tried it with a salad that night and really liked it. While I was in there, I saw that she had a lot of air fryer recipe demonstrations. I plan to try some of them, but for now, this is a good staple recipe. I have added different vegetables like kale, broccoli, cooked cauliflower, asparagus, and other things, depending on what I have. It has always been fast, easy, and good, no matter what I did to it, and it adapted well for any meal of the day.
After Easter, we had small amounts of a few things left over. I didn't toss them because I will have things like that for lunch sometimes. The next night, we had been at the doctor's office and ER from early morning until late afternoon, so I didn't feel like cooking, and we were hungry. I chopped up the last slice of ham, added some cooked broccoli, and even added a couple of tablespoons or so of macaroni and cheese, well chopped, just to be rid of it, and added in a little bit of grated cheddar with the mozzarella on top. It was sooo good that I would have loved leftovers of that! It just shows how versatile this recipe is after you get the hang of it and how quickly a meal can come together.

Basic Air Fryer Egg Recipe Rosario Cooking
Put a parchment "bowl" in the air fryer and spray it with cooking spray.
Break 4 eggs into a parchment "bowl". Scramble gently with a fork
Salt and pepper to taste (I like to use Kinder's THE BLEND instead because it has garlic powder added)
Add 3-3.5 oz chopped spinach on top of scrambled eggs.
Place 8 cherry tomatoes sliced in half on top of the spinach.
Slice 6 mozzarella balls or 12 mozzarella pearls on top of spinach between tomatoes.
Grate 3.5 oz mozzarella cheese and spread over the top.
Cook at 355° for 10-12 minutes or until it is no longer runny. Let sit for a minute and slice.
