Don't despair. Depending on how badly your small intestine was damaged, the repair can take upwards of a few months to go back to normal so although you feel better as soon as you stop eating gluten, you could still have some issues for a while.
Of course you need to ensure that you are avoiding cross contamination of food you are eating, separate butter, jam, and prep areas if you can. Check everything you are eating and remember gluten lurks in many foods. Some people also have an issue with dairy which clears up once the healing is complete for most but not all. Don't cut out dairy unless you think it is causing problems as you need good calcium intake.
Keep positive, there's lots of good GF food available now, enjoy finding what you like best.
