first of all, afaik, Pelikan, currently, doesn’t make and sell any M1000 italic nib . In any case, Pelikan never made in recent decades sharp italic nibs, so, customization would be mandatory .
The nib point that would be best candidate for sharp italic customization is B ( Broad ) or above B ( not sure that Pelikan still makes these BB and BBB ) .
As to slant or straigth-across-the-edge, both are position sensititive, more so, the slant oblique (OB) .
A M1000 Broad nib already delivers tons of ink on paper and is paper picky, also, further, if you hold a sharp italic not slightly slant to the left, your handwriting will look boxed and imo, very ugly .
For everyday use, a M800 M or, if you decide, a B, is better, for it is not so paper quality demanding .
And there is a M800 italic nib ( probably, more a mere stub than a true italic ).
I’ll let you with these two reviews:
PELIKAN 1000 M nib - already a beast in terms of ink delibery

PELIKAN M800 ITALIC BROAD nib

Honestly, I see nothing of interest in these nibs .
However,
The choice is your .
Good luck !
