The Sapphire is roundish. Just as the Emerald is squarish. No not perfectly round or square but how else should we describe them? Not Green? Look at the picture of Margriet: her earrings are emerald and her outfit has green. Why would she wear a blue saphhire with that? To copy her grandmother who now all of a sudden is known for mixing all kinds of coloured stones?
