One of my family's favorite things is a Tex/Mex type casserole. You can either make layers of things in a casserole dish or mix it all together and put it in a casserole. Cooked quinoa with some taco spices, black beanss drained and rinsed (either home prepared or canned) sprinkle a little taco seasoning over that too, corn (with chilies are good), salsa or petite diced tomatoes, chilies if you like, shredded cheddar/mexican/fajita cheesse. Squeeze half a lime over it if you want. Bake at 350F about 20-30 minutes until heated through. When done you can top with avocadoes, sour cream, even shredded lettuce if you like. Just make it up as you go. You can even add a layer of ground chicken if you want and put the taco seasoning in that as it browns instead of adding to the layers.
Here are two ideas for breakfast. They came from THM so they use their products but for the Gentle Sweet you can use a donk or two (1/32 teaspoon) of Stevia or your favorite sweetener. Use whatever your favorite protein powder is for the Creamy Dreamy. You don't have to soak overnight but it helps absorb flavors better and release phylates.
(How to prepare quinoa: Soak and cook quinoa for the week! Cold water, a little acv overnight. In the morning, pour off water, add fresh water and then pour off again. Do it a few times.
Put quinoa in a saucepan and add water to the level of the first knuckle of your third finger above the quinoa. Bring to a boil, let boil for 15 minutes, then turn off the heat and walk away while it gets fluffy. Then store in your fridge.)
Pearl’s Quinoa Breakfast
1 cup cooked quinoa
¾ cup unsweetened cashew milk or favorite plant based milk
2 Tbsp. THM Creamy Dreamy Plant Protein (or other protein powder)
12-13 raisins
1 pinch mineral salt
Sprinkle of Gentle Sweet and cinnamon
1 tsp. oven-roasted almond slices
Put cooked quinoa in bowl. Stir protein powder and nut milk together (just in the measuring cup and add to bowl. (You can heat this if you prefer!) Top it with raisins, mineral salt, Gentle Sweet, cinnamon, almond slices
Serene’s Neapolitan Quinoa
¾ - 1 cup cooked quinoa
Pinch of mineral salt
Pinch of cinnamon
1-2 tsp. Gentle Sweet
½ cup low-fat cottage cheese
1 tsp. Gentle Sweet
More cinnamon (optional)
Handful fresh blueberries
Spray small frying pan with coconut spray and add quinoa, getting the pan nice and hot, and stirring occasionally. Sprinkle on the salt and cinnamon and add the 1-2 tsp. Gentle Sweet.
Put the hot quinoa in a bowl on one side. On the other side put the cottage cheese and sprinkle 1 tsp. Gentle Sweet on top (and more cinnamon, if desired). Shove the blueberries down the middle. Don’t stir!
