Found a bunch of tops in my stash.
Eggplant Parm turned out OK. It tasted really good but was too runny. I was short on the Eggplant and think that's what went awry. Also, added too much basil. I am not a huge basil or pesto fan. I didn't notice that the crushed tomatoes had basil in them. I shouldn't have put in as much as the recipe called for.
That recipe is quite a bit of work but I actually enjoyed making it. Best part? My back held up with all that standing.
Start PT tomorrow.
