IMO you compare apples to pears, Honor. Mary is The Crown Princess of Denmark with her own court, while Catherine is the wife of the heir to the heir. The two ladies are not in the same position. In my eyes, is it only understandable that The Duchess of Cambridge sports in her position less costly jewellery than the Crown Princess of Denmark.
